LAYTON — If you’re looking for a home-cooked meal that you can eat at home but don’t have to prepare yourself, you’re in luck!

Dinners by Diana, 338 East Gentile Street in Layton, was created “so people can have dinner around the dinner table with their families.”

“My two oldest kids are twins. One was playing basketball and the other was cheer leading, and they said they wished they’d had homemade meals,” Diana McDonald said.

At the same time, neighbors and friends who knew of Diana’s culinary expertise suggested she open a restaurant.

Following lots of remodeling to the old Second National Bank building by husband and co-owner Brett McDonald and other family members, the business opened in November of 2005.

“We wanted to make it look like people felt like they were coming home,” Diana said. An old sewing machine in one corner, a rocking chair and other furnishings adorn the customer area.

Since then, it has outlasted several imitators in the Layton area and South Davis.

“We prepare it all. You don’t make it yourself,” Diana said. “Some people even put the meals in their own pan so it looks like they cooked it from scratch.”

Real potatoes are peeled and boiled, fresh meat cooked, vegetables diced, etc. Р with the odors of fresh food cooking evident to any customer walking in.

Dinners are available to feed between two to eight people, and single-serving meals are also available.

Pot roast, shredded beef and chicken enchiladas, shepherd’s pie, barbecue ribs, and ham, macaroni and cheese are among the regular meals offered.

Diana is constantly scouting out new recipes for monthly specials and takes suggestions from customers.

For example, salmon, rice and vegetables is offered at least monthly, while spaghetti and meatballs appears on the menu occasionally.
