BOUNTIFUL – The new Lakeview Bistro Cafeteria is open, and it’s bigger and filled with more menu choices.
It opened about two weeks ago, happening to coincide with the onslaught of winter weather.
During remodeling, operations were largely conducted out of a trailer to serve employees
Cafeteria Director Karla Sorensen proudly pointed out the expanded salad bar station, which greets customers near the front door.
“We have a fabulous salad bar. It’s new and improved. There’s such a variety of fruits and salads that people can get,” said Dietician Rebecca Kim.
A new “Grab ‘N Go” section is located next to the door, intended to give hurried hospital employees a quick way to get a pre-made sandwich, yogurt or other prepared item.
A hardwood floor and new serving stations of brushed aluminum and new wall decor provide a cheerful new look to the cafeteria, which Sorensen said was long in need of a redo.
For lunch and dinner, patrons can choose from two hot entrees, one of which features chicken.
There are baked and mashed potatoes, rice, two vegetables, two soups to choose from as well as a new grill. That will feature hamburgers, french fries, grilled cheese, etc.
The sweet tooth isn’t forgotten, with everything from pies to cakes, including a sugar free cake option. High protein shakes are also available.
The cafeteria’s main role is to serve patients and hospital employees. But employees from several nearby clinics also frequent the cafeteria, Sorensen said.
The public is welcome, and there are at least two widowers who eat there “all the time. They used to come with their wives until their wives passed away,” Sorensen said.
The staff includes main cook and veteran Peggy Nielsen. She has been preparing meals for 35 years, coming to Lakeview from the old South Davis Hospital.
“We have had more complements,” Kim said.
The cafeteria is open daily for breakfast, 7 a.m.-10 a.m.; lunch, 11 a.m.-2 p.m. and dinner, 5 p.m.-6:30 p.m.
