This “Party Rootbeer” recipe is one of my summer drink favorites, and it makes about four gallons of soda, enough for a gathering of almost any size.
The surprise ingredient of dry ice in this crowd-pleasing recipe gives the mix a wonderful icy taste, especially on hot summer days.
Watch the magic unfold as this recipe “smokes” over the top of your container.
3 cups white granulated sugar
3 cups brown sugar, loosely packed
1.5 gallons water
8- 1liter bottles of club soda
2-oz Zatarain’s rootbeer extract
10 pounds of dry ice
Make and serve the rootbeer in a large upright cooler with a spigot at the bottom (most are 6 gallons in size).
Then, mix the sugars and regular water in the cooler until the sugar is dissolved, and stir in the extract and club soda.
Next, carefully add the dry ice. Loosely put the lid on the cooler and let “brew” for about an hour. Do not put the lid on tightly.
Serve and enjoy!
Make sure you find a source for dry ice before you begin. In some areas it can be difficult to find.
I doubt you will have leftovers, but if so, save what remains in empty, lidded and clean gallon jugs and refrigerate. Enjoy within one day.
