BOUNTIFUL – Crowds are often backed up waiting for a chance to quench their thirst with a treat of shaved ice from Hokulia Authentic Shave Ice in Bountiful.
The stand is near Slim Olson’s at about 2301 S. Main Street, and often draws large crowds during these hot August days.
“It’s been going real well” since opening in May, said Ryan Bott, one of the owners of the franchised operation. It is his second С his Provo location has been open for four years.
“It comes down to the kind of ice we use, the commitment we have to our customers,” he said.
The ice is prepared by Farr’s Ice Cream, a longtime Ogden-based business. Bott decided to use that company after six years of research before he opened the first location.
“The key is the ice,” Bott said. “Almost every place we’ve done research across the country, they use crushed ice.”
He believes his company may be the only one in the nation to use pasteurized water, as in Farr’s process. The buckets are frozen and compressed for three days.
It’s eventually de-compressed and made lighter, and then combined with authentic ingredients brought in from Hawaii, Bott said. That includes using cane sugar instead of corn syrup.
“We want to create value for the customer,” he said. “We want them to be happy. The first time they get one they typically have a big smile on their face. That’s what gets them to come back.”
Prices range from $3 to $5 and feature more than 100 flavor combinations. Mix-ins from Farr range from coconut to macadamia nut ice cream.
“I grew up in Hawaii and would eat shaved ice nearly every day. This rivals anything from the island. Finally, real shave ice on the mainland,” said Keole Lomu, a customer.
As a finale celebration to its first season, a luau is being planned for Labor Day, Bott said.
